Cookie Cake Pie

The good news. I submitted my show last night!!! Huge relief there. The could-be-bad news. The jury looked at all the submissions this morning and I’ve been frantically checking my email every 20 min. to see if they accepted mine. I haven’t heard yet. If I bit my nails they would be down to nothing. Instead I just twirl my hair anxiously. It’s a good thing I have a ton of hair, because twirling your hair makes you shed. (Sorry, that might have been too much information.) Anyways, instead of dwelling on my nerves, I’ve decided to blog about a happy memory from Spring break. That’s right folks. You might remember I mentioned this dessert last month. Well, in honor of my birthday, my cousin Alyssa and I whipped up this beast to celebrate!! THEĀ Cookie Cake Pie.

And it was delicious!!! At least, Lyss and I thought it was. Jake and my fam were not quite as impressed. But whatever. I’m over that. I would highly recommend it. I mean, not like something you make every week. Just a special treat to overindulge with every once in a while. Here’s the low-down (P.S. Sorry the pictures aren’t that great, awful kitchen lighting…):

You need some pie crust (my mom made ours from scratch, it definitely stepped the whole dessert up a knotch):

Cookie dough of your choice (we used the classic chocolate chip):

And cake mix of your choice (we used funfetti-duh):

Basically you spread out the cookie dough on top of the pie crust (there will be left over cookie dough for delicious cookies) and then pour on the cake mix (there will also be left over cake mix, which, taking the advice of the inventor of this masterpiece, we made cupcakes out of).

Smooth it out and make sure it’s not totally to the brim, because it’s cake and it rises. Then it’s ready for the oven.

The suggested temperature/time was 350 degrees for about 25 minutes, checking it every 5 minutes after that to see if it was done. Well, we had a little trouble, and I think it ended up being in the oven for like 45 minutes. The top of the cake was slightly burned when we took it out, but the inside was finally done.

After a little surgery (aka cutting off the brown edges), we slathered on a generous portion of rainbow chip frosting. And tada!!! Your dessert is ready to be devoured.

It was heavenly.

I would recommend a nice warm cup of coffee, or some tea if that’s your preference, to wash down this intensely satisfying dessert. Just remember that the possibilities and combinations are endless! Haha. If you do try it, I hope you enjoy it as much as I did :)
